Ingredients
- Fresh lo Mein noodles 1 lb
- Olive oil 2 tsp
- Sesame oil 1 tsp
- Garlic clove minced 1 1/2
- Chunk fresh ginger root 1 in
- Shredded carrots 1 1/2 cup
- Peeled shredded zucchini 1 1/2 cup
- Scallions sliced into 1 inch segments 4

Method
- In large pot boil lo Mein noodles for about 2-2 1/2 minutes drain and rinse.
- Next coat noodles with olive oil toss well, and set aside Next heat pan with remainder of olive oil and sesame oil in a pan until smoking on high heat.
- Add vegetables and stir for about 1 1/2 then add noodles and cook until noodles are fully tender and the liquid in the pan is absorbed.
- Remove from heat and serve.
