  • Fresh lo Mein noodles 1 lb
  • Olive oil 2 tsp
  • Sesame oil 1 tsp
  • Garlic clove minced 1 1/2
  • Chunk fresh ginger root 1 in
  • Shredded carrots 1 1/2 cup
  • Peeled shredded zucchini 1 1/2 cup
  • Scallions sliced into 1 inch segments 4

Method

  1. In large pot boil lo Mein noodles for about 2-2 1/2 minutes drain and rinse.
  2. Next coat noodles with olive oil toss well, and set aside Next heat pan with remainder of olive oil and sesame oil in a pan until smoking on high heat.
  3. Add vegetables and stir for about 1 1/2 then add noodles and cook until noodles are fully tender and the liquid in the pan is absorbed.
  4. Remove from heat and serve.
