Ingredients
  • Zucchini 4 med.
  • Ground beef 1 lb
  • Medium onion (chopped) 1
  • Chopped bell peppers 1/2 cup
  • Celery diced 1/2 cup
  • Clove garlic (minced) 1
  • Worcestershire sauce 1 tsp.
  • Thyme 1/4 tsp
  • Pepper to taste
  • A cup/so Tomato/spaghetti sauce
  • Mozzarella cheese per boat 1/3 cup

Method

  1. Cut squash in half lengthwise.
  2. With small melon baller, start about 1/2 inch from end and scoop out middle of squash, making sure not to take out too much.
  3. Brown meat, onion and garlic in skillet pan in Tbsp olive oil until no longer pink.
  4. Drain browned meat; add celery, bell peppers, cheese, egg, basil, oregano, pepper, Worcestershire and tomato or spaghetti sauce.
  5. Fill up boats with meat mixture and arrange in baking dish.
  6. Top with Cheese. Bake at 325 F. degrees for 50 to 60 minutes, or until squash is tender.
  7. Makes 8 boats.
