Ingredients
- Pumpkin 1
- Or other similar winter squash 2 lb
- Cooked cannellini (drained & rinsed) 4 cups
- Medium red onion (peeled & diced small) 1
- Salt & Black pepper to taste
- Batch Spicy Cilantro Pesto 1 Spicy Cilantro Pesto:
- Packed cilantro 2 cups
- Hulled sunflower seeds (optional) 1/4 cup
- Jalapeño pepper (coarsely chopped) 1
- Cloves garlic (peeled & chopped) 4
- Zest & juice of lime 1
- Salt to taste
- Extra firm silken tofu (drained) 6 oz
- Nutritional yeast (optional) 1/4 cup

Method
- Steam the pumpkin in a double boiler or steamer basket for about 10 to 12 minutes, or until tender.
- Drain and rinse the pumpkin until cool.
- Once the pumpkin has cooled, add it to a medium bowl with the beans, onion, salt and pepper, and pesto.
- Mix well until combined.
- Spicy Cilantro Pesto Directions:
- Combine the cilantro, sunflower seeds (if using), jalapeño pepper, garlic, lime zest and juice, salt, tofu, and nutritional yeast (if using) in the bowl of a food processor and puree until smooth and creamy.
