Ingredients
  • Wine vinegar 1 cup
  • Olive oil 1/4 cup
  • Cloves garlic (cut into slivers) 3
  • Chopped fresh thyme 1 tbsp
  • Chopped fresh rosemary 1 tbsp
  • Boneless lamb (cut into cubes) 2 lb
  • Salt & pepper to taste

Method

  1. Combine wine vinegar, oil, garlic, thyme and rosemary in a shallow glass dish or large heavy plastic bag.
  2. Add lamb; cover dish or seal bag.
  3. Marinate lamb in the refrigerator up to 12 hours, turning several times.
  4. Remove lamb from marinade; discard marinade.
  5. Thread lamb onto 6 long metal skewers.
  6. Season to taste with salt and pepper.
  7. Oil hot grid to help prevent sticking, Grill lamb, on a covered grill, over medium heat 8-12 minutes, turning once or twice. Serve.
