Ingredients
  • Wheat lasagna noodles cooked slightly 1 pack
  • Raw spinach 3 pkgs (10 oz)
  • Oil 1 tbsp
  • Grated raw carrots 1 cup
  • Sliced fresh mushrooms 2 cups
  • Tomato sauce 1 can (15 oz.)
  • Tomato paste 1 can (6 oz.)
  • Chopped pitted ripe black olives 1/2 cup
  • Teaspoons dried oregano 1 1/2 tsp
  • Vegan cheese 4 cups

Method

  1. Prepare noodles, drain.
  2. Prepare spinach according to package (or simply defrost ahead of time)
  3. Sauté onion in oil, till soft.
  4. Add carrots and mushrooms; cook until crisp-tender.
  5. Stir in tomato sauce, paste, olives, and oregano.
  6. Grease 13 x 9 x 2 inch casserole pan.
  7. Layer 1/2 each noodles, cheese, spinach, sauce mixture.
  8. Repeat placing remaining cheese on top.
  9. Bake 375 degrees for 30 minutes. Serves 8.
