Ingredients
- Small onion (diced) 1
- Cloves garlic (minced) 2
- Diced carrots 1 cup
- Chopped cabbage 4 cups
- Green beans (1" pieces) 1 cup
- Whole bell peppers (chopped) 2
- Low sodium diced tomatoes 1 can (28 oz)
- Low sodium vegetable broth 6 cups
- Tomato paste 2 tbsp
- Bay leaves 2
- Each thyme & basil 1/2 tsp
- Pepper to taste
- Broccoli florets 2 cups
- Sliced zucchini 2 cups

Method
- In a large pot cook onion & garlic over medium heat until slightly softened.
- Add carrots, cabbage & green beans and cook an additional 5 minutes.
- Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves and seasonings. Simmer 6-7 minutes.
- Add in zucchini & broccoli. Simmer an additional 5 minutes or until softened.
- Remove bay leaves before serving.
