Ingredients
- Tomatoes (cut into 1 in) 2-3
- Cucumbers (cut into 1 in) 2-3
- Medium sweet onion 1
- Ears of corn (Optional) 1-2
- Large leaves of fresh basil 4
- Salt & pepper to tast

Method
- Put onions in bottom of salad bowl and cover with vinegar.
- If onions give you a bit of trouble, let them sit in the vinegar for half hour or more, before you add everything else.
- Add everything except the corn and toss well.
- Add the corn gently, so as not to break into individual kernels.
- This salad eats well as soon as it’s prepared.
- It’s alsogreat after chilling in the fridge for a couple of hours, or days!
