  • Tomatoes (cut into 1 in) 2-3
  • Cucumbers (cut into 1 in) 2-3
  • Medium sweet onion 1
  • Ears of corn (Optional) 1-2
  • Large leaves of fresh basil 4
  • Salt & pepper to tast

For A Delicious Dinner!

Method

  1. Put onions in bottom of salad bowl and cover with vinegar.
  2. If onions give you a bit of trouble, let them sit in the vinegar for half hour or more, before you add everything else.
  3. Add everything except the corn and toss well.
  4. Add the corn gently, so as not to break into individual kernels.
  5. This salad eats well as soon as it’s prepared.
  6. It’s alsogreat after chilling in the fridge for a couple of hours, or days!
