  • Spaghetti (Good quality) 1 lb
  • Olive oil 1/2 cup
  • Garlic cloves (depending on size of cloves) 3-4
  • Dried/Fresh parsley 1-2 tsp
  • Pepper to taste
  • Salt to taste

Method

  1. Bring a large pot of water to a brisk boil.
  2. Add salt. Add the spaghetti, following directions on the box.
  3. Meanwhile, heat the oil in a small pan.
  4. Slice the garlic thinly and add it to the oil.
  5. Remove the pan from the heat when the garlic turns a pale golden color (do not brown the garlic).
  6. Add the parsley, salt and pepper.
  7. Reserve 1/2-3/4 cup pasta water.
  8. Drain pasta & stir in the oil.
  9. Add the water if you think the mixture is too dry.
