Ingredients
  • French-cut green beans cooked 1 1/2 cups
  • Cherry tomatoes (cut in half) 1 cup
  • Sliced zucchini 1 cup
  • Slivered green bell pepper 1/2 cup
  • Tuna (drained & broken into chunks) 1 can
  • Red vinaigrette:

  • Red wine vinegar 1/3 cup
  • Olive oil 1/4 cup
  • Chopped parsley 2 tbsp.
  • Honey/agave 1 tsp.
  • Dried rosemary (crushed) 1 tsp.
  • Clove garlic (crushed) 1
  • Sea salt & pepper to taste

Method

  1. In a large nonmetallic bowl stir together beans, tomatoes, zucchini, bell pepper and tuna.
  2. For Red Vinaigrette dressing, in a large shaker jar combine remaining ingredients.
  3. Cover and shake until well blended.
  4. Pour over salad.
  5. Toss salad to coat.
  6. Cover and chill 2-24 hours before serving.
