Ingredients
  • Virgin olive oil 3 tbsp
  • Large onion (chopped) 1
  • Cloves garlic (crushed) 2
  • 2 Cans chopped tomatoes 14.5 oz
  • Red pepper flakes 1/4 tsp
  • Balsamic vinegar 2 tsp
  • Agave/sugar substitute of your choice 2 tsp
  • Fresh basil leaves, torn into pieces 3/4 cup
  • Salt & pepper to taste
  • Whole wheat pasta 1/2 box

Method

  1. Heat oil in a skillet. Cook onion and garlic over medium heat, until tender.
  2. Stir in tomatoes, red pepper flakes, vinegar and agave, bring to a boil, reduce heat and simmer 40-50 minutes.
  3. Add basil, salt and pepper in at the end. Serve over whole-wheat pasta.
