  • 2 cans black-eyed peas (drained) 15.8 oz
  • 1 can petite diced tomatoes (drained) 14.5 oz
  • Jalapenos (stemmed seeded & minced) 2
  • Small onion cut into small dice 1
  • Yellow bell pepper (stemmed seeded) 1/2
  • Chopped fresh cilantro 1/4 cup
  • Red wine vinegar 6 tbsp
  • Olive oil (not extra virgin) 6 tbsp
  • Salt 1/2 tsp
  • Ground black pepper 1/2 tsp
  • Garlic powder 1/2 tsp
  • Dried oregano 1 tsp
  • Ground cumin 1 1/2 tsp
