Ingredients
- 2 cans black-eyed peas (drained) 15.8 oz
- 1 can petite diced tomatoes (drained) 14.5 oz
- Jalapenos (stemmed seeded & minced) 2
- Small onion cut into small dice 1
- Yellow bell pepper (stemmed seeded) 1/2
- Chopped fresh cilantro 1/4 cup
- Red wine vinegar 6 tbsp
- Olive oil (not extra virgin) 6 tbsp
- Salt 1/2 tsp
- Ground black pepper 1/2 tsp
- Garlic powder 1/2 tsp
- Dried oregano 1 tsp
- Ground cumin 1 1/2 tsp

Method
