  • Onion (chopped) 1
  • Stalks chopped celery 3
  • Olive oil 2 tbsp
  • Mushroom soup 10 1/2 oz
  • Garlic powder 1 tsp
  • Black pepper 1/4 tsp
  • Heavy whipping cream 3 tbsp
  • Frozen tater tots 32 oz
  • Vegan shredded cheese for topping

Method

  1. Sauté onion and celery in oil until tender.
  2. Set aside to cool slightly.
  3. Scrape into a mixing bowl.
  4. Add soup, garlic powder, pepper, and half and half.
  5. Mix well.
  6. Add frozen tater tots (reserve a handful first) and toss well.
  7. Spray a casserole dish (I use my 13X9 square Pyrex baking dish) with Pam.
  8. Pour mixture into dish.
  9. Arrange reserved tots over top.
  10. Cover with vegan shredded cheese.
  11. Bake at 350 for 45 to 50 minutes until cheese is melted and just barely starting to brown.
  12. Cool slightly before serving.
