- Medium eggplant (peeled) 1
- Medium red peppers 2
- Medium zucchini 1
- Medium onion 1
- Olive oil 1 tbsp.
- Tahini 1 tbsp.
- Rice wine vinegar 2 tsp.
- Sea salt 1/2 tsp.
- Pepper 1/4 tsp.
- Fresh minced parsley 2 tbsp.

Method
- Cut the eggplant, red pepper, zucchini and onion into 1-inch pieces.
- Place in a 15x10 inch-baking pan coated with cooking spray.
- In a small bowl, combine the oil, tahini, vinegar, salt and pepper Drizzle over vegetables to coat.
- Bake, uncovered, at 450 degrees for 25-30 minutes or until tender, stirring occasionally.
- Stir in parsley before serving.
