  • Medium eggplant (peeled) 1
  • Medium red peppers 2
  • Medium zucchini 1
  • Medium onion 1
  • Olive oil 1 tbsp.
  • Tahini 1 tbsp.
  • Rice wine vinegar 2 tsp.
  • Sea salt 1/2 tsp.
  • Pepper 1/4 tsp.
  • Fresh minced parsley 2 tbsp.

Method

  1. Cut the eggplant, red pepper, zucchini and onion into 1-inch pieces.
  2. Place in a 15x10 inch-baking pan coated with cooking spray.
  3. In a small bowl, combine the oil, tahini, vinegar, salt and pepper Drizzle over vegetables to coat.
  4. Bake, uncovered, at 450 degrees for 25-30 minutes or until tender, stirring occasionally.
  5. Stir in parsley before serving.
