Ingredients
  • Bulgur 1 cup
  • Boiling water 2 cups
  • Lemon juice 3 tbsp.
  • Olive oil 2 tbsp.
  • Sliced green onion (tops only) 2 tbsp.
  • Fresh parsley (chopped) 1 tbsp.
  • Sea salt 1 tsp.
  • Fresh mint (minced) 1 tsp.
  • Medium tomato (seeded & diced) 1 tsp.
  • Romaine leaves 6

Method

  1. Place bulgur in a bowl, cover with hot water.
  2. Let stand for 30 minutes or until liquid is absorbed.
  3. Drain and squeeze dry.
  4. Stir in lemon juice, oil, onions, parsley, salt and mint.
  5. Cover and refrigerate for 1 hour.
  6. Just before serving stir in tomato.
  7. Serve in a lettuce lined bowl.
