Ingredients
- Bulgur 1 cup
- Boiling water 2 cups
- Lemon juice 3 tbsp.
- Olive oil 2 tbsp.
- Sliced green onion (tops only) 2 tbsp.
- Fresh parsley (chopped) 1 tbsp.
- Sea salt 1 tsp.
- Fresh mint (minced) 1 tsp.
- Medium tomato (seeded & diced) 1 tsp.
- Romaine leaves 6

Method
- Place bulgur in a bowl, cover with hot water.
- Let stand for 30 minutes or until liquid is absorbed.
- Drain and squeeze dry.
- Stir in lemon juice, oil, onions, parsley, salt and mint.
- Cover and refrigerate for 1 hour.
- Just before serving stir in tomato.
- Serve in a lettuce lined bowl.
