Ingredients
  • Sweet potatoes (peeled & 1/4 lengthwise) 2 lb
  • Olive oil 2 tbsp
  • Finely diced scallions 3 tbsp
  • Apple cider vinegar 4 tbsp
  • Salt 1/4 tsp

Method

  1. Preheat oven to 425 degrees.
  2. In a large baking pan, drizzle and coat potatoes in one tbsp. olive oil, cover in foil and bake for 25 minutes.
  3. Uncover, rotate potatoes and bake until potatoes are tender and golden brown (15-20 more minutes).
  4. Allow to cool, chop into bite size pieces and place in bowl.
  5. After mixing vinegar with the remaining oil, and salt, pour over potatoes.
  6. Add scallions, gently mix, and enjoy.
