Ingredients
- Sweet potatoes (peeled & 1/4 lengthwise) 2 lb
- Olive oil 2 tbsp
- Finely diced scallions 3 tbsp
- Apple cider vinegar 4 tbsp
- Salt 1/4 tsp

Method
- Preheat oven to 425 degrees.
- In a large baking pan, drizzle and coat potatoes in one tbsp. olive oil, cover in foil and bake for 25 minutes.
- Uncover, rotate potatoes and bake until potatoes are tender and golden brown (15-20 more minutes).
- Allow to cool, chop into bite size pieces and place in bowl.
- After mixing vinegar with the remaining oil, and salt, pour over potatoes.
- Add scallions, gently mix, and enjoy.
