Method

  1. Preheat the oven to 400 degrees F.
  2. Line several baking sheets with parchment paper and set aside.
  3. Use a mandolin slicer to cut the sweet potatoes into paper-thin rounds.
  4. Pile all the sweet potato rounds into a large bowl and pour the olive oil over the top.
  5. Gently toss to coat every piece with oil.
  6. Then lay the sweet potato rounds out on the baking sheets in a single layer.
  7. If you have an oil sprayer, that will be faster.
  8. Sprinkle the chips lightly Salt.
  9. Bake for 20-25 minutes until crisp and golden around the edges.
