Ingredients
  • Peanut Oil 1 tbsp
  • Chili oil 1 tbsp
  • Onions (sliced) 2
  • Zucchini (thinly sliced) 2
  • Broccoli (florets) 4 oz
  • Button mushrooms (sliced) 4 oz
  • Small bok choy (halved) 4 oz
  • Light brown sugar 1 tbsp
  • Light soy sauce 2 tbsp
  • Rice vinegar 1 tbsp
  • Honey 2 tbs

Method

  1. Heat both oils in a large skillet.
  2. Add the onions and stir-fry over medium heat for 1-2minutes, or until they start to soften.
  3. Add the zucchini, and broccoli and stir-fry for an additional 2-3 minutes.
  4. Add the mushrooms, bok choy, sugar, soy sauce, and vinegar and stir-fry for 1-2 minutes.
  5. Serve immediately.
