Ingredients
  • Julienned zucchini 2 cups
  • Julienned yellow squash 2 cups
  • Sliced radish 1 cup
  • Light olive oil 1/2 cup
  • Plus 2 tsp. cider vinegar 2 tbsp.
  • Dijon mustard 1 tbsp.
  • Minced fresh parsley 1 tbsp.
  • Sea salt 3/4 tsp.
  • Dill weed 1/2 tsp.
  • Pepper 1/4 tsp.

Method

  1. In a large bowl, toss the zucchini, yellow squash and radishes.
  2. In a small bowl, combine remaining ingredients. Pour over vegetables.
  3. Cover and refrigerate 2hours.
