Ingredients
- Julienned zucchini 2 cups
- Julienned yellow squash 2 cups
- Sliced radish 1 cup
- Light olive oil 1/2 cup
- Plus 2 tsp. cider vinegar 2 tbsp.
- Dijon mustard 1 tbsp.
- Minced fresh parsley 1 tbsp.
- Sea salt 3/4 tsp.
- Dill weed 1/2 tsp.
- Pepper 1/4 tsp.

Method
- In a large bowl, toss the zucchini, yellow squash and radishes.
- In a small bowl, combine remaining ingredients. Pour over vegetables.
- Cover and refrigerate 2hours.
