  • Boneless skinless chicken breasts 4
  • Tomato, peeled 1
  • Shallots, minced 2
  • Clove garlic, minced 1/2
  • Fresh rosemary 1 tbsp
  • Salt and pepper to taste

Method

  1. Preheat oven to 375 degrees.Sprinkle chicken breasts with salt and pepper.
  2. In a small bowl, combine tomato, shallots, garlic and rosemary.
  3. Tear 4 large pieces of aluminum foil. In the center of each piece, place a chicken breast. Divide vegetables evenly among the 4 breasts
  4. Fold up the foil and crimp loosely at the top so steam can escape. Place packets on a baking sheet and bake 20 minutes or until chicken is no longer pink
