Ingredients
- Salmon fillet 8 oz
- Low-sodium soy sauce 1 tsp
- Sambal olek 1 tsp
- Toasted sesame oil 1 tsp
- Grated fresh ginger 1 tsp
- Pinch kosher salt
- Warm cauliflower rice 2 cups
- Avocado (pitted peeled) 1
- Thinly sliced scallions
- Toasted sesame seeds

Method
- In a medium bowl, toss salmon with soy sauce, sambal olek, sesame oil, ginger and salt. Cover and refrigerate for 2 hours.
- Divide cauliflower rice between 4 bowls and top each with a quarter of the salmon and a quarter of the avocado. Sprinkle with scallions and sesame seeds and serve.
