Ingredients
  • Olive oil 1 tbsp
  • Carrots (chopped) 2
  • Onion (finely chopped) 1 large
  • Vegetable stock 1l
  • Tomato (chopped) 400g can
  • Pea and beans (frozen and mixed) 200g
  • Basil leaves (optional) handful
  • Vegan cheese (grated) to serve
  • Tortellini (fresh filled, spinach and mushroom is great) 250g pack
  • Can substitute tortellini for dumplings or potato gnocchi

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften.
  2. Add the stock and tomatoes, then simmer for 10 mins.
  3. Add the peas and beans with 5 mins to go. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked.
  4. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of cheese.
  5. Pairs well with a slice of garlic bread.
