  • vegetable oil 1 tablespoon
  • onions (chopped) 1 cup
  • carrots (chopped) 3/4 cup
  • garlic (minced) 3 cloves
  • green bell pepper (chopped) 1 cup
  • red bell pepper (chopped) 1 cup
  • celery (chopped) 3/4 cup
  • chili powder 1 tablespoon
  • fresh mushrooms (chopped) 1 1/2 cups
  • kidney beans (with liquid) 1 (19 ounce) can
  • whole kernel corn (undrained) 1 (11 ounce) can
  • ground cumin 1 tablespoon
  • oregano (dried) 1 1/2 teaspoons
  • basil (dried) 1 1/2 teaspoons
  • whole peeled tomatoes (with liquid and chopped) 1 (28 ounce) can

Method

  1. Heat oil in a large saucepan over medium heat.
  2. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder.
  3. Cook until vegetables are tender, about 6 minutes.
  4. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn.
  5. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium.
  6. Cover, and simmer for 20 minutes, stirring occasionally.
