  • Vegetable oil 1 tbsp
  • Onions (chopped) 1 cup
  • Carrots (chopped) 3/4 cup
  • Garlic (minced) 3 cloves
  • Green bell pepper (chopped) 1 cup
  • Red bell pepper (chopped) 1 cup
  • Celery (chopped) 3/4 cup
  • Chili powder 1 tbsp
  • Fresh mushrooms (chopped) 1 1/2 cups
  • Kidney beans (with liquid) 19 oz
  • Whole kernel corn (undrained) 11 oz
  • Ground cumin 1 tbsp
  • Oregano (dried) 1 1/2 tsp
  • Basil (dried) 1 1/2 tsp
  • Tomatoes (with liquid peeled & chopped) 28 oz

Method

  1. Heat oil in a large saucepan over medium heat.
  2. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder.
  3. Cook until vegetables are tender, about 6 minutes.
  4. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn.
  5. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium.
  6. Cover, and simmer for 20 minutes, stirring occasionally.
