Ingredients
- Spaghetti (uncooked and dry) 8 ounces
- Olive oil 2 tablespoons
- Onion (chopped) 1 medium
- Tomato sauce 2 cans (15 oz each)
- Tomatoes (diced) 1 can (10 oz)
- Diced Green chilies 1 can (4 oz)
- Ground cumin 1/2 teaspoon
- Whole black beans (drained and rinsed) 1 can (15 oz )

Method
- Boil dried spaghetti according to the package instructions until it's al dente. Drain and set aside.
- In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and slightly golden.
- Add Tomatoes and Sauce.
- Stir in the diced tomatoes and tomato sauce. Mix well to combine. Allow the mixture to come to a simmer.
- Add the drained and rinsed black beans to the skillet. Sprinkle the ground cumin over the mixture. Stir to incorporate the ingredients evenly.
- Add the diced green chilies to the skillet. Stir well. Let the sauce simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
- Once the sauce has simmered for 10 minutes, add the boiled spaghetti to the skillet. Gently toss the spaghetti in the sauce until it's well coated. Continue to cook for an additional 2-3 minutes, or until the spaghetti is heated through.
- Remove the skillet from heat. Serve the Fiesta Spaghetti in individual plates or bowls.
- If desired, top each serving with shredded cheese, a dollop of sour cream, chopped cilantro, and sliced jalapeños for extra flavor and texture.
