Ingredients
  • Spaghetti (uncooked and dry) 8 ounces
  • Olive oil 2 tablespoons
  • Onion (chopped) 1 cup
  • Tomato sauce 2 cans
  • Tomatoes (diced) 1 can (10 oz)
  • Green chilies (undrained)
  • Ground cumin 1/2 teaspoon
  • Whole black beans (drained and rinsed) 1 can (15 oz )

Method

  1. Cook spaghetti according to package directions, omitting salt.
  2. Heat oil in large skillet over medium heat.
  3. Add onion; cook 5 minutes or until tender, stirring occasionally.
  4. Add sauce, undrained tomatoes, beans and cumin.
  5. Simmer 10 minutes, stirring occasionally. Drain spaghetti; add to skillet and toss with tomato mixture.
  6. For extra flavor try adding: Corn, Cilantro, Basil, Garlic or Jalapenos.
