Ingredients
- Fresh fava beans in the pod 5 lb.
- Or Frozen fava beans 15 oz
- Tomatoes (peeled seeded & diced) 2
- Shredded fresh basil 3 tbsp. Dressing:
- White wine vinegar 1 tsp.
- Small garlic clove (crushed) 1
- Extra virgin olive oil 4 tbsp.
- Salt and pepper

Method
- Cook the fava beans in a large saucepan of boiling water for 3 minutes, or until just tender.
- Drain and tip into a large serving dish or arrange on 4 serving plates.
- Whisk the dressing ingredients together in a bowl or pitcher and spoon over the beans while they are still warm.
- Scatter over the diced tomato, basil.
- Serve at room temperature.
