Ingredients
  • Fresh fava beans in the pod 5 lb.
  • Or Frozen fava beans 15 oz
  • Tomatoes (peeled seeded & diced) 2
  • Shredded fresh basil 3 tbsp.
  • Dressing:

  • White wine vinegar 1 tsp.
  • Small garlic clove (crushed) 1
  • Extra virgin olive oil 4 tbsp.
  • Salt and pepper

Method

  1. Cook the fava beans in a large saucepan of boiling water for 3 minutes, or until just tender.
  2. Drain and tip into a large serving dish or arrange on 4 serving plates.
  3. Whisk the dressing ingredients together in a bowl or pitcher and spoon over the beans while they are still warm.
  4. Scatter over the diced tomato, basil.
  5. Serve at room temperature.
