  • fresh Mushrooms 8 oz
  • Onion (chopped) 4 small
  • Garlic (minced) 2 clove
  • Butter 2 tablespoons
  • Flour 3 tablespoons
  • Vegetable broth 2 cups
  • Almond milk 1 cup
  • Salt 1⁄2 teaspoon
  • Pepper 1⁄4 teaspoon
  • Nutmeg 1⁄4 teaspoon

Method

  1. Cut the mushrooms into slices. Melt butter in large frying pan. Add in onions, garlic, and mushrooms.
  2. Cook until onions are soft. Blend in 2 T. flour and stir.
  3. Add in the chicken broth and heat until slightly thickened while stirring frequently.
  4. Stir in milk with additional 1 T. flour and seasonings. Add in milk to soup.
  5. Heat to thicken while stirring frequently.
