  • Couscous 1 cup
  • Frozen green peas 1/2 cup
  • Ground coriander 1 tsp
  • Chopped fresh mint leaves 2-3 tbsp
  • Sea Salt & ground black pepper

Method

  1. Cook couscous according to package directions, adding peas and coriander when you add couscous to hot water.
  2. When ready to fluff with a fork, add mint and toss to combine. Season, to taste, with sea salt and black pepper.
