- Couscous 1 cup
- Frozen green peas 1/2 cup
- Ground coriander 1 tsp
- Chopped fresh mint leaves 2-3 tbsp
- Sea Salt & ground black pepper

Method
- Cook couscous according to package directions, adding peas and coriander when you add couscous to hot water.
- When ready to fluff with a fork, add mint and toss to combine. Season, to taste, with sea salt and black pepper.
