  • Tomatoes (halved) 3 1/2 pounds (11 medium)
  • Onion (quartered) 1 small
  • Garlic cloves (peeled and halved) 2
  • Olive oil 2 tbsp
  • Thyme leaves (fresh) 2 tbsp
  • Sea salt 1 tsp
  • Pepper 1/4 tsp
  • Basil leaves (fresh) 12

Method

  1. Place tomatoes, onion and garlic in a greased 15x10x1 inch baking pan; drizzle with oil.
  2. Sprinkle with thyme, salt and pepper; toss to coat.
  3. Bake at 400 degrees for 25-30 minutes or until tender, stirring once. Cool slightly.
  4. In a blender, process tomato mixture and basil in batches until blended.
  5. Transfer to a large saucepan and heat through.
  6. Garnish with additional basil if desired.
