  • Ripe peaches (pitted & quartered) 4
  • Extra-virgin olive oil
  • JalapeƱo (seeded & diced finely) 1
  • Small red onion (diced) 1
  • Crushed red pepper (more, spicier)
  • Salt & pepper to taste
  • Lime juice (or to taste) 1

Method

  1. Heat the grill to medium.
  2. With skin on, quarter peaches and brush with the olive oil.
  3. Grill the peaches until nicely charred (or browned as desired), 3 to 5 minutes per side.
  4. Removing the skin is optional after grilling.
  5. Dice the peaches.
  6. In a medium-size bowl, combine the peaches with the rest of the ingredients, mixing well.
  7. The salsa can be served warm or after being refrigerated to let the flavors further set.
  8. Serve with tortilla chips, or as a tantalizing garnish for your favorite dish.
