Ingredients
  • Zucchini (trimmed and halved) 4 large
  • Pepper to taste
  • Salt to taste
  • Steak (lean and thinly sliced) 1 lb
  • Yellow onion (sliced) ½
  • Salt ½ tsp
  • Pepper ¼ tsp
  • Green pepper (sliced) ½
  • Button mushrooms (sliced) 4 oz
  • Provolone cheese (low-fat) ½ cup
  • Olive oil (drizzle)

Method

  1. Preheat oven to 400 (F) or200 (C). Cut zucchini in half, and scoop out the insides (repurpose for another dish).
  2. Season with olive oil, pepper, and salt. Bake for 20 minutes.
  3. Set aside. While zucchini is baking, season steak with pepper and salt and sauté on medium-high heat until steak is browned and cooked through.
  4. Set aside. In the same pan, season onions with pepper, salt, and olive oil and sauté for 5 minutes.
  5. Add peppers and mushrooms, and cook for another 5 minutes.
  6. Toss steak back into the cooked veggie and sauté for 1 minute.
  7. Distribute the steak and veggies among zucchini halves.
  8. Top with shredded cheese. Bake for 5 minutes, or until cheese is melted.
