- Celery stalks (chopped) 2
- Bay leaves 2
- Whole black peppercorns 6
- White wine (dry) 1/2 cup
- Salmon fillets 4 (6 oz)
- Sea salt to taste
- Pepper to taste
- Water

Method
- In a 10 inch skillet, combine onion, celery, bay leaves, peppercorns, wine and enough water to come to 1 1/2 inches up the side of skillet.
- Season salmon fillets with sea salt and pepper; place in skillet.
- Cover and simmer 5 minutes. Remove from heat; let stand until fillets are opaque, 8-10 minutes.
- Serve warm or chilled.
