  • Onion (diced) 1 small
  • Celery stalks (chopped) 2
  • Bay leaves 2
  • Whole black peppercorns 6
  • White wine (dry) 1/2 cup
  • Salmon fillets 4 (6 oz)
  • Sea salt to taste
  • Pepper to taste
  • Water

Method

  1. In a 10 inch skillet, combine onion, celery, bay leaves, peppercorns, wine and enough water to come to 1 1/2 inches up the side of skillet.
  2. Season salmon fillets with sea salt and pepper; place in skillet.
  3. Cover and simmer 5 minutes. Remove from heat; let stand until fillets are opaque, 8-10 minutes.
  4. Serve warm or chilled.
