Ingredients
  • Shrimp (cooked, peeled & deveined) 2 lb (medium)
  • Red onion (cut into rings & separated) 1 medium
  • Olives (pitted ripe, drained) 1 cup
  • Olive oil 1/2 cup
  • Fresh parsley (minced) 1/3 cup
  • Lemon juice 3 tbsp.
  • Red wine vinegar 3 tbsp.
  • Garlic (minced) 1 clove
  • Bay leaf 1
  • Fresh basil (minced) 1 tbsp.
  • Sea salt 1 tsp.
  • Ground mustard 1 tsp.
  • Pepper 1/4 tsp.

Method

  1. In a 3-quart glass serving bowl, combine shrimp, onion, lemon and olives.
  2. In a jar with a tight fitting lid, combine the remaining ingredients; shake well.
  3. Pour over shrimp mixture and gently stir to coat.
  4. Cover and refrigerate for 24 hours, stirring occasionally.
  5. Discard leaf before serving.
