Ingredients
- Shrimp (cooked, peeled & deveined) 2 lb (medium)
- Red onion (cut into rings & separated) 1 medium
- Olives (pitted ripe, drained) 1 cup
- Olive oil 1/2 cup
- Fresh parsley (minced) 1/3 cup
- Lemon juice 3 tbsp.
- Red wine vinegar 3 tbsp.
- Garlic (minced) 1 clove
- Bay leaf 1
- Fresh basil (minced) 1 tbsp.
- Sea salt 1 tsp.
- Ground mustard 1 tsp.
- Pepper 1/4 tsp.

Method
- In a 3-quart glass serving bowl, combine shrimp, onion, lemon and olives.
- In a jar with a tight fitting lid, combine the remaining ingredients; shake well.
- Pour over shrimp mixture and gently stir to coat.
- Cover and refrigerate for 24 hours, stirring occasionally.
- Discard leaf before serving.
