  • Onion (sliced) 1 small
  • Red wine vinegar 2 Tbsp
  • Lemon juice 1 Tbsp
  • Dijon mustard 2 tsp
  • Garlic (minced) 1 clove
  • Ground pepper 1/2 tsp
  • Sea salt 1/4 tsp
  • Ground ginger 1/4 tsp
  • Lamb loin (chops) 8 (3 oz. each)
  • Fresh rosemary (minced or 3/4 teaspoon dried rosemary, crushed) 2 tsp

Method

  1. In a large re-sealable plastic bag, combine the all ingredients; add the lamb chops.
  2. Seal bag and turn to coat; refrigerate for several hours or overnight.
  3. Coat grill rack with cooking spray before starting the grill.
  4. Remove chops from marinade, discarding marinade and onion.
  5. Grill chops, covered, over medium heat for 5-7 minutes on each side or until meat is completely cooked (for medium-rare, a meat thermometer should read 145F; medium, 160F; well done, 170F).
