Ingredients
- Onion (sliced) 1 small
- Red wine vinegar 2 Tbsp
- Lemon juice 1 Tbsp
- Dijon mustard 2 tsp
- Garlic (minced) 1 clove
- Ground pepper 1/2 tsp
- Sea salt 1/4 tsp
- Ground ginger 1/4 tsp
- Lamb loin (chops) 8 (3 oz. each)
- Fresh rosemary (minced or 3/4 teaspoon dried rosemary, crushed) 2 tsp

Method
- In a large re-sealable plastic bag, combine the all ingredients; add the lamb chops.
- Seal bag and turn to coat; refrigerate for several hours or overnight.
- Coat grill rack with cooking spray before starting the grill.
- Remove chops from marinade, discarding marinade and onion.
- Grill chops, covered, over medium heat for 5-7 minutes on each side or until meat is completely cooked (for medium-rare, a meat thermometer should read 145F; medium, 160F; well done, 170F).
