Ingredients
  • Whitefish fillets 1 lb
  • Canola oil 2 tbsp
  • Onion (diced) 1 1/2 cup
  • Mushroom (thinly sliced) 1 1/2 cup
  • Dill weed 1/2 tsp
  • Salt 3/4 tsp
  • Lemon scallion Sauce
  • Scallions (diced) 1/4
  • Canola oil 1 tsp
  • Lemon (for zest) 1
  • Lemon (juiced) 1

Method

  1. Preheat oven to 350 F place fish fillets in 10 in baking pan set aside.
  2. In large saucepan heat oil over medium heat and add vegetables.
  3. Cook covered for about 10 minutes stirring occasionally.
  4. Uncover and stir till liquid evaporates then mix in all remaining ingredients.
  5. Wrap tightly in foil with fillets.
  6. Bake for 30 minutes and cover in sauce.
  7. In small saucepan sauté scallions in oil till tender in small bowl mix all sauce ingredients and remove from heat stirring well.
