Ingredients
- Whitefish fillets 1 lb
- Canola oil 2 tbsp
- Onion (diced) 1 1/2 cup
- Mushroom (thinly sliced) 1 1/2 cup
- Dill weed 1/2 tsp
- Salt 3/4 tsp Lemon scallion Sauce
- Scallions (diced) 1/4
- Canola oil 1 tsp
- Lemon (for zest) 1
- Lemon (juiced) 1

Method
- Preheat oven to 350 F place fish fillets in 10 in baking pan set aside.
- In large saucepan heat oil over medium heat and add vegetables.
- Cook covered for about 10 minutes stirring occasionally.
- Uncover and stir till liquid evaporates then mix in all remaining ingredients.
- Wrap tightly in foil with fillets.
- Bake for 30 minutes and cover in sauce.
- In small saucepan sauté scallions in oil till tender in small bowl mix all sauce ingredients and remove from heat stirring well.
