  • Ground beef chuck 8 oz.
  • Parsley (finely chopped) 2 tbsp.
  • Tomatoes (finely chopped sun-dried) 2 tbsp
  • Aleppo pepper 2 tbsp.
  • Ground allspice 1⁄4 tsp.
  • Mint (dried) 3⁄4 tsp.
  • Ground cumin 1⁄2 tsp.
  • Ground coriander 1⁄2 tsp.
  • Ground cinnamon 1⁄4 tsp.
  • Yellow onion (grated, drained in a strainer) 1⁄2 medium
  • Kosher salt To taste
  • Freshly ground black pepper To taste

Method

  1. Build a hot charcoal fire in a grill.
  2. In a large bowl, stir together beef, parsley, tomatoes, Aleppo, allspice, mint, cumin, coriander, cinnamon, onions, salt, and pepper.
  3. Form 1 tbsp. beef mixture each around the end of 22 skewers; grill, turning, until lightly charred, about 4 minutes.
