Ingredients
  • Fresh spinach/romaine leaves (torn) 5 cups
  • Tuna (drained & broken into chunks) 1 can
  • Frozen cooked bay shrimp (thawed) 1 cup
  • Shredded cucumber 3/4 cup
  • Shredded red radishes 1/2 cup
  • Sesame vinaigrette:

  • Rice vinegar/cider vinegar 3 Tbsp.
  • Sesame oil 2 tbsp.
  • Vegetable oil 2 tbsp.
  • Soy sauce 2 tsp.
  • Sesame seeds 2 tsp.
  • Drops of stevia sweetener 2-3
  • Sea salt & pepper to taste

Method

  1. In a large salad bowl toss together spinach, tuna, shrimp, cucumber and radishes.
  2. For dressing, in a shaker jar combine Sesame Vinaigrette ingredients.
  3. Cover and shake until well blended.
  4. Drizzle over salad; toss well.
