  • Pork loin (boneless roast) 1 (3 pounds)
  • Dijon mustard 1/4 cup
  • Garlic (minced) 4 cloves
  • Chives (minced) 1/3 cup
  • Fresh sage (minced) 1/4 cup
  • Fresh thyme (minced) 2 tbsp
  • Fresh rosemary (minced) 1 tbsp
  • Pepper (divided) 2 3/4 tsp
  • Sea salt (divided) 1 tsp
  • Olive oil 1 tbsp

Method

  1. Starting about a third in from one side, make a lengthwise slit down the roast to within 1/2 in. of the bottom.
  2. Turn roast over and make another lengthwise slit, starting about a third in from the opposite side.
  3. Open roast so it lies flat; cover with plastic wrap. Flatten to 3/4-in. thickness; remove plastic wrap.
  4. Combine mustard and garlic; rub two-thirds of the mixture over roast.
  5. Combine the chives, sage, thyme rosemary, 3/4-teaspoon pepper and 1/2-teaspoon salt.
  6. Sprinkle two-thirds of the herb mixture over roast.
  7. Roll up jellyroll style, starting with a long side; tie several times with kitchen string. Rub oil over roast; sprinkle with remaining salt and pepper.
  8. If grilling the roast, coat grill rack with cooking spray before starting the grill.
  9. Grill roast, covered, over indirect medium heat or bake, uncovered, at 350 (F) degrees for 1 hour.
