Ingredients
  • Garlic (quartered) 3 large cloves
  • Olive oil 3 tbsp.
  • Mustard (Dijon-style) 3 tbsp.
  • Lemon juice 2 tbsp.
  • Ground black pepper 1 tsp.
  • Broiler chicken (cut into serving pieces) 1-3 1/2 pound
  • Fresh rosemary (minced or 2 tsp. dried rosemary leaves, crumbled) 2 tbsp.

Method

  1. Combine garlic, oil, mustard and lemon juice in blender.
  2. Blend until smooth and creamy. Pour mixture into a bowl; stir in rosemary and pepper.
  3. Brush chicken pieces with mustard mixture. Cover; refrigerate 6 hours or overnight.
  4. Prepare outdoor grill for barbecuing. Bring coals to medium heat.
  5. Place chicken, meaty-side up, on grill. Cook 12 minutes. Turn; continue to cook 20-25 minutes until chicken is no longer pink.
  6. Remove and place on serving dish.
  7. TO BROIL: Preheat the broiler; arrange chicken on rack in broiling pan.
  8. Broil 7-9 inches from heat 25 minutes. Turn; continue broiling 20 minutes or until chicken is no longer pink.
