  • Lamb sirloin (chops 1/2 inch thick) 4
  • Fresh thyme leaves 2 tsp.
  • Sea salt to taste
  • Pepper to taste

Method

  1. Prepare grill to medium heat. Rub each chop with 1/2 tsp. of the thyme, firmly pressing it into the flesh.
  2. Place the chops on the grill. Cook first side until browned, 4-5 minutes.
  3. Turn and cook until the meat springs back when you touch it, 4-5 minutes or longer for medium-rare.
  4. Transfer to a serving plate, season with salt and pepper.
