No-Cook Chocolate Pudding

  • Full-fat coconut milk 3 1/2 oz
  • Hot water 1/2 cup
  • Pitted dates 4 1/2 oz
  • Raw cacao powder 1/2 cup
  • Chia seeds 1/4 cup
  • Melted coconut oil 1 tsp
  • Vanilla extract 2 tsp
  • Sea salt 1/4 tsp
  • Dark chocolate shavings

 Note: Sorry Lynda, this recipe is not fixable. Seeds are a P and almost all the other ingredients are S.

I am hoping that in time you can use heavy whipping cream in a regular pudding recipe.

You hopefully will find that since whipping cream does not contain sugars that it will not bother you.

For A Delicious Breakfast!


  1. Stir together flour, soda, and salt.
  2. In a mixer bowl beat butter and shortening on medium speed of electric mixer
  3. for 30 seconds.
  4. Add sugar and beat till fluffy.
  5. Add egg, and applesauce and vanilla; beat well.
  6. Add dry ingredients to beaten mixture, beating till well combined.
  7. Stir in chocolate pieces.
  8. Drop from a teaspoon 2 inches apart onto an ungreased cookie sheet.
  9. Bake in 375° oven for 8 to 10 minutes or till done.
  10. Remove; cool.
  11. Makes about 72.
