Ingredients
- Full-fat coconut milk 3 1/2 oz
- Hot water 1/2 cup
- Pitted dates 4 1/2 oz
- Raw cacao powder 1/2 cup
- Chia seeds 1/4 cup
- Melted coconut oil 1 tsp
- Vanilla extract 2 tsp
- Sea salt 1/4 tsp
- Dark chocolate shavings
Note: Sorry Lynda, this recipe is not fixable. Seeds are a P and almost all the other ingredients are S.
I am hoping that in time you can use heavy whipping cream in
a regular pudding recipe.
You hopefully will find that since whipping cream does
not contain sugars that it will not bother you.

Method
- Stir together flour, soda, and salt.
- In a mixer bowl beat butter and shortening on medium speed of electric mixer
- for 30 seconds.
- Add sugar and beat till fluffy.
- Add egg, and applesauce and vanilla; beat well.
- Add dry ingredients to beaten mixture, beating till well combined.
- Stir in chocolate pieces.
- Drop from a teaspoon 2 inches apart onto an ungreased cookie sheet.
- Bake in 375° oven for 8 to 10 minutes or till done.
- Remove; cool.
- Makes about 72.
