Ingredients
  • Egg whites 4
  • Fresh mushrooms 1 cup
  • Sausage (no sugar) 1/2 cup
  • Diced Onions 1/8 cup
  • Approved salsa (no sugar) 2 tbsp
  • Salt 1/8 tbsp
  • Pressed garlic clove 1
  • Olive oil (optional) 1 tbsp

 Note: With any of the egg recipes the egg yolk can be added. Egg whites only are the
healthier versions of the recipes.

On any *WP* or *P* recipe you can add your favorite meat or cheese.

Method

  1. Brown sausage into a patty. With sausage drippings or olive oil in pan sauté mushrooms, onions, and garlic.
  2. When they are tender, add egg whites and scramble together. Serve with salsa over eggs and spinach.
