  • Vinegar 1 cup

Tip: 2 tbs of this cream cheese has about 1 carb and 1 protein. It’s significantly lower carb than regular cream cheese so as long as you have enough carbs or protein to meet your 8:1 food ratio, for the meal, you can use this in a number of dishes. We’re working on making new yummy recipes for this cream cheese all the time. This cream cheese can be treated as a W in any S or P heavy meal.

For A Delicious Dinner!

Method

  1. Stirring regularly, put half and half on high heat, and gently stir until it gets to its rolling boil (make sure to watch the video above on this one, it helps you visualize what it should look like)
  2. Now add half of the vinegar and gently stir. After about 30 seconds, add the second half and continue stirring gently. Don’t disrupt the curdling process, you don’t want to mix in the lumps.
  3. Once your half and half has stopped curdling (2-3 minutes) strain it with cheesecloth or a fine metal strainer and let it rest for 15 minutes to partially cool.
  4. Blend the curds for about 2 to 3 minutes until it gets rich and creamy, time may vary depending on your blender, but ensure it's completely smooth.
  5. Refrigerate and use as needed just like cream cheese!
