A fun way to eat meat and eggs!

Method

  1. Put the broth in a pressure cooker. Pressure cook the pork for about 2 hours at a high temperature. (Put the fat side up).
  2. Make sure it is tender enough to shred.
  3. Remove the extra fat. Shred some of the pork using a fork.
  4. When you finish some of the pork. Take out some meat for your barbecue pulled pork in a bowl.
  5. In a skillet, heat the pulled pork and enchilada sauce over medium heat until warmed through. Stir occasionally to prevent sticking. Keep it warm on low heat.
  6. In the same skillet, create four wells in the pulled pork mixture and crack an egg into each well. Season the eggs with salt and pepper.
  7. Cover the skillet and cook the eggs over medium heat for about 5-7 minutes or until the whites are set, and the yolks are still slightly runny. Adjust the cooking time according to your preference for egg doneness.
  8. Once the eggs are cooked, remove the skillet from heat.
  9. Enjoy your weovos rancheros with pulled pork and enchilada sauce immediately while still warm.
