- Pork shoulder
- Broth 1 cup
- Pulled Pork with enchilada sauce
- Eggs

A fun way to eat meat and eggs!
Method
- Put the broth in a pressure cooker. Pressure cook the pork for about 2 hours at a high temperature. (Put the fat side up).
- Make sure it is tender enough to shred.
- Remove the extra fat. Shred some of the pork using a fork.
- When you finish some of the pork. Take out some meat for your barbecue pulled pork in a bowl.
- In a skillet, heat the pulled pork and enchilada sauce over medium heat until warmed through. Stir occasionally to prevent sticking. Keep it warm on low heat.
- In the same skillet, create four wells in the pulled pork mixture and crack an egg into each well. Season the eggs with salt and pepper.
- Cover the skillet and cook the eggs over medium heat for about 5-7 minutes or until the whites are set, and the yolks are still slightly runny. Adjust the cooking time according to your preference for egg doneness.
- Once the eggs are cooked, remove the skillet from heat.
- Enjoy your weovos rancheros with pulled pork and enchilada sauce immediately while still warm.
