  • Head cauliflower 1
  • Eggs 2
  • 2 tablespoons parsley, chopped 2 tbsp
  • For the garlic parmesan crust:

  • Panko bread crumbs 1 cup
  • Grated parmesan 1/4 cup
  • Garlic salt 2 tsp
  • Italian seasoning 2 tsp

Method

  1. Preheat oven to 450˚F/230˚C.
  2. Cut the head of cauliflower in half
  3. Pluck bite-sized florets from each half.
  4. Trim bottoms of florets as necessary.
  5. In a medium bowl, mix the parmesan crust ingredients.
  6. In a separate bowl, whisk eggs. Dredge the cauliflower in the eggs, then garlic parmesan mixture.
  7. Lay the cauliflower on a baking sheet.
  8. Drizzle with olive oil, then season with salt and pepper.
  9. Bake for 20-30 minutes, until crispy and browned to your liking.
  10. Garnish with chopped parsley.
