  • Medium avocados 3
  • Large bunch fresh basil 1
  • Lemon juiced 1
  • Organic extra virgin olive oil
  • Aged balsamic vinegar (optional)
  • Sea salt
  • Fresh ground black pepper

Method

  1. Cut the avocado around the equator and remove pit.
  2. Slice into rounds, then remove peel.
  3. Lightly toss avocado slices in lemon juice.
  4. Slice tomatoes and salt lightly.
  5. Layer tomato slices, avocado slices and basil leaves.
  6. Drizzle with olive oil and balsamic vinegar, if using.
  7. Salt and pepper to taste.
