- Large eggplant (sliced 1 IN thick) 2
- Marinara sauce (without sugar) 1 jar
- Slices provolone cheese 20
- Fresh spinach 1 cup
- Salt 1/2 tsp
- Pepper flakes optional
- Sausage/pepperoni for the top optional
- Sliced olives optional

Method
- Preheat your oven to 425 F.
- Sprinkle salt on eggplant large but thin slices and bake for 15-20 minutes.
- Remove the eggplant from the oven and turn your broiler on.
- Spread desired amount of sauce over each eggplant slice followed by one slice of provolone.
- Arrange some fresh spinach and meat over the cheese and broil for 3-5 minutes.
- Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.
