  • Boiled eggs 6 hard
  • Mayonnaise (sugar-free) 1/4 cup
  • Scallions (green parts only sliced) 2
  • Dijon mustard 1 tbsp
  • Sea salt to taste
  • Freshly cracked black pepper to taste

Method

  1. Chop/dice hard boiled eggs and place in a medium-sized mixing bowl an egg slicer is great for this.
  2. Add remaining ingredients and using a spatula, gently fold until evenly incorporated. Egg yolks should have combined with mayo to form a creamy dressing.
  3. Adjust salt & pepper, to taste, and garnish with chopped scallion or parsley (opt) before serving.
  4. Cover & chill until ready to serve.
