Ingredients
  • Chicken 1-4 to 5 lb
  • Carb free noodles 12 oz
  • Flour 1/2 cup
  • Butter 2 cup
  • Heavy whipping cream 2 1/2 cup
  • Broth 1/2 cup
  • Mushrooms (diced) 2 cup
  • Vegan cheese of your choice 1/2 lb
  • Chicken bouillon powder or cubes 2 tsp
  • Riced cauliflower or broccoli 1-2 cups

NOTE: This is a large casserole. Excellent dish if you are expecting a lot of extras for dinner. Great!

NOTE: would also add a cup or two of riced cauliflower to soak up some moisture. The mushroom soup is an S so, you may want to add a tsp of onion soup mix for the flavor.

For A Delicious Lunch!

Method

  1. Cook chicken until tender. Remove meat from bones. (Best results use thighs and breast of chicken).
  2. Cut into small pieces. Cook 12 oz. pkg. of noodles in salted water.
  3. Make a white sauce of flour, butter (or chicken fat), broth with heavy whipping cream
  4. While hot, add mushroom and bouillon and remaining whipping cream.
  5. Combine chicken, noodles, cheese and white sauce.
  6. Put in 13×9” pan or 2 small pans.
  7. Cover with small lumps of butter and vegan cheese.
  8. Bake for 1 hour at 350 degrees.
