Ingredients
- Chicken 1-4 to 5 lb
- Carb free noodles 12 oz
- Flour 1/2 cup
- Butter 2 cup
- Heavy whipping cream 2 1/2 cup
- Broth 1/2 cup
- Mushrooms (diced) 2 cup
- Vegan cheese of your choice 1/2 lb
- Chicken bouillon powder or cubes 2 tsp
- Riced cauliflower or broccoli 1-2 cups

NOTE: This is a large casserole. Excellent dish if you are expecting a lot of extras for dinner. Great!
NOTE: would also add a cup or two of riced cauliflower to soak up some moisture. The mushroom soup is an S so, you may want to add a tsp of onion soup mix for the flavor.

Method
- Cook chicken until tender. Remove meat from bones. (Best results use thighs and breast of chicken).
- Cut into small pieces. Cook 12 oz. pkg. of noodles in salted water.
- Make a white sauce of flour, butter (or chicken fat), broth with heavy whipping cream
- While hot, add mushroom and bouillon and remaining whipping cream.
- Combine chicken, noodles, cheese and white sauce.
- Put in 13×9” pan or 2 small pans.
- Cover with small lumps of butter and vegan cheese.
- Bake for 1 hour at 350 degrees.
