Ingredients
  • Black beans (rinsed)1 can
  • Ro-Tel 1 can
  • Frozen corn 1 Pkg
  • Onion (chopped) 1/2 cup
  • Red pepper (diced) 1/2 cup
  • Enchilada sauce 1 can
  • Mushroom soup (cream) 1 can
  • Heavy whipping cream 1.1/2 cup
  • Zucchini diced 2
  • Shredded pepper jack vegan

Method

  1. Whisk enchilada sauce and soup.
  2. Gradually whisk in the heavy whipping cream until smooth.
  3. Combine mixture with remaining ingredients.
  4. Cook on low 6-8 hours or on high 3-4 hours in your crockpot.
