- Black beans (rinsed)1 can
- Ro-Tel 1 can
- Frozen corn 1 Pkg
- Onion (chopped) 1/2 cup
- Red pepper (diced) 1/2 cup
- Enchilada sauce 1 can
- Mushroom soup (cream) 1 can
- Heavy whipping cream 1.1/2 cup
- Zucchini diced 2
- Shredded pepper jack vegan

Method
- Whisk enchilada sauce and soup.
- Gradually whisk in the heavy whipping cream until smooth.
- Combine mixture with remaining ingredients.
- Cook on low 6-8 hours or on high 3-4 hours in your crockpot.
