Ingredients
  • Whole bay leaves
  • Ground red pepper (cayenne) 1 tsp
  • Black pepper (ground) 1/2 tsp
  • Salt 1.1/2 tsb
  • White pepper 1-1.1/2 tsp
  • Dried thyme leaves 1 tsp
  • Rubbed sage 1/4 tsp
  • Unsalted butter 2 tbsp
  • Dash of tabasco sauce
  • Onion, celery, and green bell pepper 1 cup
  • Boneless chicken breast (cubed) 1 lb
  • Smoked sausage links, cubed 3
  • Minced garlic 1 ½ tsp
  • Riced cauliflower already made 3 cup
  • Tomato sauce 1/2 cup
  • Boiling chicken stock 3.1/2 cup

NOTE: Be very careful with seasonings on this one!! I generally use the least amount of
the red and white pepper and there is plenty of heat to it. If you have family
members who don’t like hot, you may want to use as little as ¼ tsp red pepper and
½ tsp. white pepper.

Method

  1. Combine the first 7 ingredients in a small bowl and set aside.
  2. Melt butter and cook half of onion, celery, and bell pepper mixture until it begins to brown lightly; add sausage and chicken and cook until lightly browned.
  3. Stir in seasoning mix and remaining vegetables and garlic and cook until onion is clear.
  4. Add rice and stir for about 5 minutes, then stir in tomato sauce and hot stock. .
  5. Bring to a boil, cover, and cook over low heat for about 20 minutes, then add the cauliflower fried rice , and serve.
