Ingredients
  • Plant-based noodles(uncooked) 3 cups
  • Butter 3 tbsp
  • Red bell pepper (diced) 1/3 cup
  • Onion finely (diced) 1
  • Seasoning salt 1/2 tsp
  • Chili powder 1 tsp
  • Cream of chicken soup 10-3/4 oz
  • Heavy whipping cream 1-1/3 cups
  • Shredded sharp Cheddar cheese 3 cups
  • Shredded parmesan cheese 1/3 cup
  • Mild green chilies (optional) 4 oz
  • Cooked chicken 3 cups

Method

  1. Heat oven to 375°F.
  2. Cook shells al dente according to package directions.
  3. Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder
  4. In a large bowl combine soup, onion mixture, heavy whipping cream and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chilies.
  5. Spread into a 9x13 casserole dish. Top with remaining cheese.
  6. Bake 30-35 minutes or until hot and bubbly.
